This mixture of spirits and mixers consists of Malibu coconut rum that will bring out that beachy flavor, pineapple juice, grenadine and blue curaçao for color, and crushed ice.

Make sure to garnish your creation to bring your presentation up a level. You can use any fruit to do so.

Cherries, pineapple, and strawberries all look great with this tropical cocktail.

Rainbow Paradise Cocktail Ingredients

  • Pineapple juice 4 oz: Pineapple and coconut are two of the most tropical fruits. Combine them for an island-worthy flavor. 
  • Malibu Coconut Rum 2 oz: A shot is normally 1.5 oz, so we suggest you use just one shot so that you don’t feel too wild. You can go for the full 2 oz if you’re having a great day.
  • Grenadine 1 oz: It gives this drink its perfect red color, which will fade into orange next to the pineapple juice.
  • Blue Curacao 1 oz: Perhaps my favorite of the bunch, the bright color of this drink also works as a beautiful gradient when poured slowly down the glass.
  • 1 oz of water: You’ll be tempted to get dehydrated by being out all day anyway, so add an ounce of water to this recipe to help prevent the drying effects of the sun.
  • Crushed ice: What’s a refresher without ice? Keep your cocktail cold!

How to make a Rainbow Paradise Cocktail

  1. Pour grenadine into a hurricane glass.
  2. Fill the glass with crushed ice or small cubes.
  3. In a separate cup or shot glass, combine pineapple juice and Malibu.
  4. Slowly pour the mixture over the ice into the hurricane glass.
  5. In another cup, mix the water and blue curacao.
  6.  Place the spoon against the glass and pour the blue curacao mixture slowly over it so that it will float over the yellow later.
  7. Garnish with a lemon or orange slice.

Tips and Substitutions

View your glass from eye level to ensure the colors haven’t mixed together, muddying the rainbow.

The key here is to pour each layer slowly.

Better prepare your glass by placing it in the freezer shortly before you desire to make your drink. This will frost your glass, keeping your drink colder longer.

Add a squeeze of lime if the pineapple juice and coconut rum mixture is too sweet to you.

Once you add grenadine, your drink instantly becomes very sweet. Lime will combat that with a sour flavor.

You can also combat it being too sweet by switching the coconut rum with vodka.

You can even switch your grenadine for orange juice for a colorful sunset vibe that I love. 

We recommend serving this drink lakeside with some light food like chips and dip.
