S’mores Sushi Ingredients:

  • 1 cup graham cracker crumbs – The crushed graham cracker is included in the recipe to provide a s’mores crunch. It’s also a lovely complement to the sweet base.
  • 1/4 cup unsalted butter, melted – Unsalted melted butter holds the graham cracker crumbs together, making a rich blanket base with a texture similar to sushi rice. This transforms this treat into a buttery confection that adds flavor and texture depth.
  • 1 cup marshmallow fluff – Marshmallow fluff adds a sweet and spreadable layer of marshmallow flavor to the cupcake in an easy-to-work-with form. Its gummy texture is just sticky enough to hold the rest of the ingredients together in a bite.
  • 1/2 cup mini marshmallows – Mini marshmallows add a wonderful burst of marshmallow sweetness as the sushi is eaten. Toasted, they contribute just a hint of that characteristic campfire taste.
  • 1 cup melted chocolate chips – The melted chocolate chips form a rich, luscious swatch of chocolate and a remembrance of s’mores, all those campfires, and a childhood well spent. 
  • 1 large chocolate bar, cut into thin strips – Slivered versions of large chocolate bars lend a touch of elegance and heighten the chocolate flavor; sliced thinly, the strips of chocolate can provide firm yet melting textures that interact with the other soft ingredients. 
  • 2 sheets of nori (seaweed) or thin chocolate crepes –  Use nori for a slight umami hit, or opt for thin chocolate crepes for a purely sweet profile. Use these sheets as the outside paper, binding all these wonderful fillings together to make a pure and simple sushi roll

How to Make S’mores Sushi:

  1. Mix the graham cracker crumbs and melted butter.
  2. Lay the sheet of nori or chocolate crepe on a clean surface. (You can use a piece of parchment paper or lightly coat the surface with a bit of cooking spray to line your surface.)
  3. Spread the thin layer of the graham cracker mixture and then the marshmallow fluff onto the nori or crepe, from corner to corner. Press lightly with the back of a spoon.
  4. Top with mini marshmallows.
  5. Heat your chocolate chips and pour the melted chocolate over the graham cracker and marshmallow layer.
  6. Place the strips of the bar evenly across the bottom third of the nori or crepe.
  7. Roll this up tight at the bottom so the filling doesn’t spill out. It’s often best to use a spatula to start rolling.
  8. Slice the roll into bite-sized pieces.
  9. Serve immediately, or chill in the refrigerator for a firmer texture.

  • Using a pot or pan to melt your chocolate chips works best, but no matter what method you use to melt your chocolate, remember to stir frequently. 
  • Sprinkle sea salt, sprinkles, or fine sugar over your sushi rolls for an extra flavor.
