- 1/4 cup coconut oil, melted
- 1 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk
For the Streusel Topping (crumb topping):
- 1/2 cup rolled oats
- 1/4 cup almond flour
- 1/4 cup coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons coconut oil, melted

Here’s is how to make this healthy coffee cake.
- Preheat the oven to 350°F (175°C) and grease or place parchment paper in the bottom of a 9-inch square baking pan. none of the ingredients need to be brought to room temperature except the butter if used to grease the pan.
- In a large bowl, whisk together the whole wheat flour, almond flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix the melted coconut oil, applesauce, eggs, vanilla extract, and almond milk until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared baking pan and spread it out evenly.
- In a small bowl, mix together all the streusel topping ingredients until crumbly.
- Sprinkle the streusel topping evenly over the cake batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
