Healthy Coffee Cake Instructions:

Here’s is how to make this healthy coffee cake. 

  1.  Preheat the oven to 350°F (175°C) and grease or place parchment paper in the bottom of a 9-inch square baking pan.  none of the ingredients need to be brought to room temperature except the butter if used to grease the pan.
  2. In a large bowl, whisk together the whole wheat flour, almond flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3.  In another bowl, mix the melted coconut oil, applesauce, eggs, vanilla extract, and almond milk until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. In a small bowl, mix together all the streusel topping ingredients until crumbly.
  7. Sprinkle the streusel topping evenly over the cake batter.
  8.  Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Set aside the cake to allow the cake to cool completely in the pan before slicing and serving. before careful when serving so you dont get the crumble all over the place. 
  10. With any leftover coffee cake all you need to do to save this to eat later you can either use plastic wrap / aluminum foil or store in an airtight container but only after the cake cools

  • 1/4 cup coconut oil, melted
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons coconut oil, melted
