  • 1 (8 oz) package cream cheese, softened and cubed: Cream cheese acts as a binding agent for the rest of your creamed corn, turning into a kind of sauce.
  • 4 tablespoons butter: Combine butter with your other ingredients for a delicious savory flavor.
  • 1/3 cup milk: Milk in casserole recipes enhances the richness and creaminess of the dish, which can help to intensify flavors as well as give a velvety smooth texture
  • 1/2 teaspoon salt: Add salt into your mixture to help bring out all of the other flavors in the dish.
  • 1/4 teaspoon black pepper: A bit of pepper can make all the difference in this corn casserole recipe.
  • 1 (18 oz) bag frozen corn, thawed: Of course you can use fresh corn, but frozen corn often is easier and expedites the process.
  • 1/4 teaspoon cayenne pepper (optional): Your casserole dish might be begging for some spice. If that’s the case, add a pinch of cayenne pepper
  • 1 cup sharp cheddar cheese, grated: No cheesy corn casserole is complete without lots of shredded cheese.

How to Make Cream Cheese Corn Casserole

  1. Preheat oven to 350°F and grease a 2-quart baking dish.
  2. In a medium pot or slow cooker over low heat, add the cream cheese and butter until melted. 
  3. Add the milk and stir until smooth.
  4. Add the salt, pepper, corn and cayenne pepper (if using).
  5. Pour into baking dish and sprinkle with cheese.
  6. Bake until golden and bubbly. Baking time should be about 20 minutes. 
  7. Serve and refrigerate leftovers.

Tips and Tricks

Be sure to wrap any leftovers in saran wrap or transfer to an airtight container before refrigerating. 

A casserole left at room temperature will spoil much faster. 

If cayenne pepper isn’t enough spice for you consider adding green chiles before baking. Scallions and bacon bits can also be great on top for a crunchy bite

Sometimes cheddar can overpower a dish, so I also use monterey jack in this cream cheese corn casserole recipe.

One of my favorite ways to serve this corn casserole with cream cheese is with a roast since they cook so easy in a crock pot while you’re at work.

It also heats up easily in microwave. Be sure to use a microwave-safe dish.

Instructions

    1. Preheat oven to 350°F and grease a 2-quart baking dish.
