This delicious and colorful salad is one of my favorite salads to make.

It’s my favorite salad of all time; I make it at home all the time, not just because it’s delicious but because of all of that bright color.

It’s also very nutritious and healthy with the addition of beet greens.

Is this a dish you might whip up to impress dinner guests or something you could add regularly to your dinner rotation because it’s healthy and delicious?

Luckily, this salad is just the ticket. It features beetroot and carrot.

Beetroot Recipe

Beetroot is a powerhouse of nutrients, and even a small helping makes for the perfect side to any entree.

Of course, this recipe can be made for two or twenty, and the root veggies are hearty enough to make this a meal in itself. 

This little root vegetable is rich in antioxidants, vitamins, minerals, and fibre, which produce many health benefits for the body.

Not to mention it is delicious! Sweet, earthy beets pair perfectly with the tangy punch of balsamic dressing and the crunch of toppings.

This cold salad is a dish that feels decadent, but it’s very healthy, and it goes with everything, any time of the year.

Beetroot Salad Ingredients

  • 2 large beetroots, peeled and grated: Try raw beets or roast the beets for even more flavor. Red beets are the go-to but golden beets, and Greek beets are also an option. Don’t forget to peel the skins before you cook the beets.
  • 1 green apple, grated: This will add a little bit of a sour punch to your salad making it even more flavorful.
  • 1 carrot, grated: You can’t have a hearty salad without lots of vegetables. Pick up a bag of shredded carrots at the store if you’re running low on time.
  • Juice of 1 lemon: Many people say lemon juice works just as well as salt and pepper to bring out the unique flavors in food. Lemon juice will also work as part of our dressing recipe.
  • A handful of fresh parsley chopped: Parsley can be used in many different ways in a salad. In this instance, its bitter flavor helps contrast some of the tangier ingredients. 
  • 2 tablespoons olive oil: I use extra virgin olive oil on pretty much everything. While some shy away from oils in food, I’m here to tell you that in moderation, olive oil can be a highly nutritious source of healthy fats.
  • Salt and pepper to taste: You can’t go wrong with salt and pepper. Let these additions accompany your lemon juice in perfecting the flavors in this dish.
  • A handful of chopped walnuts (optional): As always, if you or a family member have a nut allergy maybe skip this step. If you love nuts in your salads, try toasted walnuts for an extra crunch.

How to Make This Salad

  1. Peel and cut your beets, then add your beetroot, your apple, and your carrots into a large mixing bowl.
  2. Add in your lemon juice, chopped parsley, and olive oil. Mix until evenly combined.
  3. Season with salt and pepper and mix well. You can season to your preference.
  4. Add your chopped walnuts and toss to combine. 
  5. Cover it and allow to chill in the refrigerator for 30 minutes to 1 hour before serving.
  6. You can transfer it to a large serving dish or serve it out of your mixing bowl. Use salad serving utensils to dole out portions and enjoy!

Tips to Remember

  • You could even make the salad with some added apple cider vinegar for added health benefits. 
  • Crunchy nuts, roasted vegetables, and fresh greens work well with beets and add so much flavor.
  • When roasting vegetables or beets, wrap each beet in tin foil to retain flavor, but don’t forget to wash them under running water beforehand.
  • Many people also like to boil or steam their carrots in a pot of water for the perfect consistency.
  • Simply finish your salad off by crumbling some feta cheese on top to add even more texture and flavor. If you want to use goat cheese instead, it’s also a great option.
  • To toast walnuts, all you’ll need to do is place them on a baking sheet and bake at 350 for around 12 minutes, flipping halfway through.  

Dressing Options

While admittedly the salad is tasty in its own right, you can always spice it all up with your own dressing.

Balsamic vinaigrette or lemon vinaigrette are both great options.

If you do decide to make the dressing, a food processor is a great appliance for mincing and emulsifying your dressing ingredients.

To thicken homemade dressings add Greek yogurt for extra creaminess and a texture similar to a green goddess dressing. 

You might even add a drizzle of maple syrup for extra sweetness.

As you assemble the salad, don’t forget to mix frequently, and chill the salad just before serving for the perfect temperature.
