Ingredients:

  • 1 kg chicken, cut into serving pieces
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium potatoes, peeled and cubed
  • 2 medium carrots, peeled and cubed
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 1/4 cup liver spread or liver pâté
  • 1/4 cup green peas
  • 1/4 cup grated cheese
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions on How to Cook Chicken Caldereta:

  1.  Heat the oil in a large pot over medium heat. Add onions and garlic and sauté until they become fragrant and translucent.
  2.  Add chicken pieces to the cooking pot until they are lightly browned on all sides. make sure you clean the chicken and dry it with a paper towel. make sure this is all done on a lower heat.
  3. Pour in the soy sauce and add tomato sauce. Stir to coat the chicken evenly.
  4. Add the chicken broth and bring the mixture to a boil. Reduce the heat to low and let it simmer until chicken is cooked for about 15 minutes.
  5. Add liver spread or liver pâté ( or liver paste) until it is well incorporated into the sauce.
  6. Add potatoes and carrots to the pot. Cook for another 10 minutes, or until the vegetables are tender
  7.  Add bell peppers, green peas, and grated cheese. Stir well to combine.
  8. Season with salt and pepper to taste you can add in a little bit of chili pepper flakes if you want to give it a little kick. Let it simmer for an additional 5 minutes to allow the flavors to meld together.
  9. Serve hot over steamed rice. if you want to store this for later make sure you keep it in a airtight container in the refrigerator.
