- 1 kg chicken, cut into serving pieces
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and cubed
- 1 cup tomato sauce
- 1 cup chicken broth
- 1/4 cup liver spread or liver pâté
- 1/4 cup green peas
- 1/4 cup grated cheese
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions on How to Cook Chicken Caldereta:
- Heat the oil in a large pot over medium heat. Add onions and garlic and sauté until they become fragrant and translucent.
- Add chicken pieces to the cooking pot until they are lightly browned on all sides. make sure you clean the chicken and dry it with a paper towel. make sure this is all done on a lower heat.
- Pour in the soy sauce and add tomato sauce. Stir to coat the chicken evenly.
- Add the chicken broth and bring the mixture to a boil. Reduce the heat to low and let it simmer until chicken is cooked for about 15 minutes.
- Add liver spread or liver pâté ( or liver paste) until it is well incorporated into the sauce.
- Add potatoes and carrots to the pot. Cook for another 10 minutes, or until the vegetables are tender
- Add bell peppers, green peas, and grated cheese. Stir well to combine.
- Season with salt and pepper to taste you can add in a little bit of chili pepper flakes if you want to give it a little kick. Let it simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve hot over steamed rice. if you want to store this for later make sure you keep it in a airtight container in the refrigerator.
