For the pie crust
- 2 1/2 cups flour

For the strawberry filling
- 5 cups fresh strawberries
- 1 cup sugar
- 3 tablespoons cornstarch
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract

- whipped cream or vanilla icecream

- Prepare the pie crust by mixing the dry ingredients and add the cold cubed butter to the mixture and use a paster cutter or your fingers to work it into the flour mixture until it resembles crumbs
- gradually add in the ice water a tablespoon at a time, until the dough comes together
- shape the dough into a disc, wrap and refrigerate for atleast 30 minutes.
- once the dough is chilled, preheat the oven to 375 and roll out the dough until it is about 1/8 inch thick
- carefully transfer the dough to your pie dish and shape it gently.
- trim edges and line crust with parchment paper and fill it with pie weights
- bake for 15 minutes to set the crust
- remove parchment paper and weights and bake for an additional ten minutes, allow to cool completely
- prepare the strawberry filling by cooking over medium heat, stirring constantly with sugar and cornstarch
- remove from heat and add vanilla and lemon juice
- pour the filling into the dish and add a few blueberries in the corner where the stars will go.
- using the extra pie dough, cut out stars and lines to create the flag decoration
