Guacamole Tortilla Cups Ingredients: 

  • 3 Tortillas: These are our crunchy cup building blocks.  Choose whichever you fancy: traditional flour, whole wheat, or even gluten-free. 
  • Cooking Spray: Lightly coat the tortillas prior to sticking them into the muffin tin. Olive oil is a great choice
  • 2 Large Avocados: You know what this is for—our guacamole! The star of the show! Avocados are high in fat and nutrients, adding a creamy richness.
  • 1 Diced tomato: A juicy hand-picked splash for freshness, and the perfect pop of color. I use about eight cherry tomatoes, diced. 
  • ½ Small onion, minced: Onions help bring out all the other flavors in your baked tortilla dish! I prefer using white onions, but red onions work as well.

  • 1 lime: The fresh lime juice brings tang to the guacamole while rounding out its flavor. Adding lime juice also prevents the avocado pieces from browning quickly. You can also add lemon if you’d like.
  • Ground Cumin to taste: Spice it up! Cumin adds a little extra pow to your guac, but if you aren’t a fan, you can skip this step.
  • Salt and Pepper to taste: Every good guacamole needs salt and pepper for seasoning. It enhances all the natural flavors so fully that every bite is perfectly seasoned. 
  • Garnish with sweet corn: Sweet corn adds color and sweetness to your guac. You can also add cilantro if you fancy it.

How to make Guacamole Tortilla Cups: 

  1. Preheat your oven to 350°F. 
  2. Cut rounds approximately 8 cm in diameter from each tortilla. You can use a small class and a knife to get your circles or a cookie cutter.
  3. Coat a cupcake tin lightly with a cooking spray of your choice. This will prevent them from sticking and also make them extra crispy! 
  4. Press them into the mini muffin pan, pressing slightly on the sides and bottoms to form cup shapes. 
  5. Bake until golden or for 10-12 minutes in the oven. They should be lightly browned
  6. Remove from the oven and set aside for 5 minutes, and let cool. 
  7. Scoop the flesh out of your avocados and place it into a mixing bowl
  8. Mash the avocados.
  9. Squeeze lime juice into the bowl and then sprinkle seasonings to taste. 
  10. Mix everything together
  11. Fold in the diced tomatoes and onions until evenly mixed.
  12. Fill each tortilla cup with 2 tablespoons of guacamole just before serving, top with a teaspoon of tomatoes and a sprinkle of sweetcorn, then add a final dash of freshly ground pepper. 
  13. Enjoy fresh!
