Tzatziki Chicken Salad Ingredients: 

Homemade Tzatziki Sauce:

  • Plain Greek yogurt (1 cup plus 2 tablespoons): This dairy-driven, creamy yogurt has just the right amount of sourness from probiotics and tons of protein. Do not try to substitute this with mayonnaise or mayo! 
  • Cucumber (1/2, grated or cubed): Cucumbers are perfect for adding crunch to salads and are a great low-calorie, filling food to incorporate.
  • 2 to 3 Garlic Cloves (smashed): Adds that wonderful garlic bite bringing the heat up a notch or two.
  • Olive oil (2 tablespoons): Olive oil adds richness and gives the salad a wonderful texture. It also adds healthy fats that won’t cause the salad to dry out. I’ve made the dressing without the olive oil to reduce calories so you can skip it. 
  • Fresh Dill (optional, 2 tablespoons chopped): This adds a little more freshness to the sauce and a bit of color!
  • Season to taste with salt and freshly ground pepper: These classic seasonings complement the sauce and balance the other flavors

Salad:

  • Cooked Chicken (2 cups, chopped): This base adds protein, making it a meal, not just a snack. You can also use shredded chicken if you’d prefer. Coat the chicken with your favorite fresh herbs and spices to make it your creation. 
  • Romaine lettuce (2 cups, chopped): Every salad needs a green to accompany it! Romaine lettuce is great, but you can also add Kale for extra fiber! 
  • Grape Tomatoes (1 cup, halved): Sweet, juicy tomatoes add colorful, great-tasting flair.
  • Pepperoncini Peppers (1/2 cup, sliced): These add tang and a bit of spicy heat to bring out the zing in the salad. I am not a huge fan of these normally, but in the chicken tzatziki salad, it is to die for. 
  • Kalamata Olives (½ cup, sliced): A briny, savory element that adds even more Mediterranean oomph, giving that Greek-inspired flavor we are going for. Plus, the flavor combo with the pepperoncini works well together.
  • Red Onion (¼ cup, chopped): Delicate but delicious with its sweet bite, it adds a wonderful complexity and crunchiness.
  • Feta Cheese (½ cup, crumbled): Creamy feta finishes the salad, balancing out all the elements just right. A must-have for any Greek food.

How to make Tzatziki Chicken Salad:

  • Assembling a Salad: Place the romaine and grape tomatoes in a salad bowl. Add the pepperoncini peppers, Kalamata olives, and chopped red onion.
