Strawberry Earthquake Cake Ingredients: 

  • 1 box of vanilla or white cake mix (prepare as per box directions): A layer of boxed cake mix is the foundation for your Strawberry Earthquake Cake. Include ‘boxed cake mix’ on your shopping list, and also add butter and oil to the list because you’ll need those too to prepare a boxed cake.
  • 2 cups of strawberries: Please use fresh ones if you don’t want the whole cake to be soggy cake. I can’t stress that enough.
  • 8 ounces of cream cheese softened: Honestly, who doesn’t love cream cheese frosting? Your cake won’t turn out if you skip this! 
  • 1 cup powdered sugar: This ensures that the powdered sugar also gets incorporated into the cream cheese and leaves the cream cheese with that frosting taste and look.
  • 1 cup whipped cream: The fluffiness of the recipe, you won’t find this anywhere else.
  • 1 teaspoon vanilla extract: To round out the flavors.
  • Chocolate shavings or cocoa powder: While it does a bit of extra yumminess to your dessert, it is mostly for show. You will look like a professional for sure!
  • Additional strawberries: Decorate your creation with the rest of your strawberries to tie the whole thing together! The extra strawberries add to the sweetness, and it will truly make your cake look amazing! 

How to make Strawberry Earthquake Cake

Making the cake:

  • Preheat oven as directed on the box for a 9×13 baking dish or pan
  • Follow the instructions provided to make cake mix
  • Add half of your sliced strawberries to the cake batter
  • Pour the batter into a prepared baking dish
  • Bake according to package directions.
  • Let the cake cool entirely.

Making the cream cheese layer:

  • Soften the cream cheese in a medium bowl at room temperature for at least half an hour or longer. 
  • Add powdered sugar, whipped cream, and vanilla extract.
  • Using an electric mixer,  mix until well combined; its appearance is similar to whipped cream.
